APPLE TART FROM MADRID

Crust

  • ¼ pound (1 stick) unsalted butter
  • ½ cup sugar
  • 1 large egg yolk
  • 1 ½  cups sifted all-purpose flour
  • Pinch of salt
  • 1/8 teaspoon baking powder

 

Custard

  • 1 cup milk
  • Peel of ½ lemon (yellow part only)
  • 3 large egg yolks
  • ¼ cup sugar
  • ¼ cup all-purpose flour
  • 1 ½ teaspoons unsalted butter

 

Filling

  • ¼ cup sugar
  • 1 teaspoon fresh lemon juice
  • ½ teaspoon ground cinnamon
  • 4 apples, peeled, cored, and cut into ¼ inch slices
  • ½ cup apple jelly
