RUSTIC CORN GUACAMOLE

 

Mexican cuisine often employs a lot of, if not all, the ingredients that are used in this recipe. Corn, tomatoes, jalapeño, limes, garlic, and avocados are all food items commonly found in Mexican dishes.

 

The author of the cookbook, Pati Jinich, is Mexican herself, and grew up making a lot of the recipes that are in her cookbook, including Rustic Corn Guacamole. I believe the fact that she is Mexican adds to the authenticity of the recipe.

 

Rustic Corn Guacamole is a good example of an appetizer or side dish, as it can be eaten by itself with chips, or it can be used as a topping for a variety of dishes. I think it is a good example of a Mexican appetizer/side dish, because almost all of the ingredients it contains are produced in Mexico, and are representative of Mexican culture.
