FRANCE, POTATO CROQUETTES

Potato Croquettes

  • Peel potatoes and boil them in water until they are soft (25-30 minutes)
  • While they boil, melt a quarter cup of butter in the microwave
  • In a bowl, mix the melted butter, 4 egg yolks, pinch of sugar, a few pinches of salt and the nutmeg
  • Sieve the potatoes from the water and in the pot begin mashing the potatoes
  • While mashing, add the ingredients in the bowl and half a cup of parmesan cheese and continue mashing to ensure proper mixture
  • Once mixed, let the potato mix cool
  • While it cools, pour ½ cup cooking oil into a saucepan and turn it onto medium heat.
  • Prepare 2 small bowls and crack 2 and beat 2 eggs in one, and place the breadcrumbs in the other
  • Once cooled, divide the mixture into equal parts and roll them into balls or cork-like shapes
  • Dip it in beaten egg, then roll it in breadcrumbs and finally put in the simmering oil and cook until it is brown (increase the heat to cook faster, but watch out for splashing hot oil)
