STEAMED WALNUT PUDDING
Madeira wine is closely associated with this cuisine. Madeira wine is named after the Portuguese island that the grapes used to produce the wine are grown on. Vineyards of Camara de Lobos on the southern coast and Santana of the northern coast of the island produce the best grapes of Madeira wine. Sercial, Verdelho, Bual, Malmsey, Terrantez and Bastardo grape varieties have proven to produce the best quality wines. 

The cookbook used for this assignment was interesting, as each volume in the series included a variety of countries with various recipes from their distinct cuisines. The volume of our cookbook contained recipes from Egypt, Spain, Greece, Morocco and of course Portugal. At the beginning of each recipe, an insightful description is provided explaining the flavours, origins and traditions of the recipe.

This rich Portuguese pudding called pudim, is traditionally served at weddings. It contains a distinct nutty flavour which is balanced with the sweetness of our chosen Madeira wine, originating from Camara de Lobos, Madeira.
