WILTED WATERCRESS SALAD

Peruvian cuisine incorporates potatoes into every meal as well as garlic for flavouring.  e salt added to most dishes exemplifies the simple flavours to create a complex Peruvian taste.

The deep red and rich orange colours on the cover of the cookbook are an excellent representation of the Peruvian culture. The cookbook contains a detailed analysis of how traditional ingredients, for example a specific potato native to Peru, is incorporated into their daily cuisine.

As mentioned in my introduction, the recipe does not include any measurements, the directions are broad, and there is no picture of the final product. I had to incorporate my experience in Peru and try to reproduce a style and flavour that would reflect what someone would experience in Peru.
