IRISH STEW

We prepared a recipe for Irish Stew from Malachi McCormick’s Irish Country Cooking. Our final reflections on this project are as follows.

 Interestingly, we learned that potatoes were traditionally central to the Irish diet, but they fell out of favour after WWII due to linkages with famine and poverty (McCormick, 1988). Our classmates seemed to really enjoy the dish, stating that “our Irish Stew was better than in restaurants,” and some asked for the recipe! Overall, Irish Stew is cheap and easy to make, and smells and tastes delicious.

As the Irish would say, bain taitneamh as do bhéile.
