Making it in Canada

POTATO CROQUETTES

Canada is a major producer, exporter and importer of an immense variety of agricultural and food products ranging from processed foods with global value chains to local, farm-based value chains.  In this section, we share 3 of our research insights and assess to what extent our recipe can be made from Canadian agricultural and food products.

The country which produced the most amount of nutmeg in 2014 is Guatemala a central American country. Guatemala, Indonesia and India have produced 88% of the nutmeg in the world in Neither France nor Canada were producing any nutmeg in 2014 (FAO, 2017).

China, India and Russian were the three largest potato producers in the world in 2014 France ranked #8 in potato production in the world in 2014, while Canada ranked in the top 20 (FAO, 2017).

France has the highest per capita butter consumption in the world (Fox, 2017). However, because of global price increase for butter and resistance to increase prices in French butter market, during the month we were working our project, French stores actually ran out of butter (Fox, 2017), which means we could not have made French Croquettes in France! Fortunately, the Canadian butter market was not affected. French, bakeries in Canada continued to create French treats (Shore, 2017).

In summary, 9 of the 10 ingredients we needed are produced in Canada, while the other 1 ingredient, nutmeg, can be purchased without much difficulty.
