THE BIRD THAT FLEW AWAY 

The author Paula Wolfert is the undisputed queen of Mediterranean food. While living in Morocco, Paula came across many traditional dishes, and wanted to keep these traditional foods alive. She felt that in today’s world everything is becoming “fusion food” and the distinctive and delicious Moroccan food is not being portrayed, hence why she created The Food of Morocco. The author dedicated her book to the memory of her mentor and friend Khadija Jaidi. The Food of Morocco won the James Beard Award for International Cooking.
