SWEET POTATO CURRY

  • Wash and steam the sweet potatoes.
  • Heat ½ tbsp. ghee in a separate pot and pop the mustard seeds.
  • Lower the heat and melt the rest of the ghee; add garlic and cook until it browns.
  • Add green peppers and cook for 2 or 3 minutes more.
  • Next add the spices and cook for 3 to 5 minutes.
  • Then add milk but do not allow to boil.
  • Transfer the steamed sweet potatoes into a larger bowl and mix in the sauce.
  • Add salt to taste.
  • Serves 4.
